A nutrition label is a standardized data sheet, but "standardized" means different things in different countries. A US label shows Calories (capital C, meaning kilocalories) and %DV; a European label shows kJ and kcal side by side per 100 g; an Australian label reports sodium but a British label also shows salt equivalent; a Japanese label uses a 100 g base with no %DV. Travelers, dietitians, food importers, and health-conscious consumers who cross these label systems regularly need a systematic conversion framework, not just a formula.

Energy: Kilocalories (kcal) vs Kilojoules (kJ)

Energy on nutrition labels appears in two units: kilocalories (kcal, commonly written "Calories" with a capital C in the US) and kilojoules (kJ, used in most metric countries). Both measure the same quantity — the heat energy released when food is metabolized.

The two dominant label formats differ in base quantity, required nutrients, and energy display.

US Nutrition Facts (FDA, 21 CFR Part 101)
